A quesadilla is the perfect meal to celebrate Cinco de Mayo

On May 5, 1862 Mexican General Ignacion Zaragoze poured his heart out and secured a Mexican victory over the French. And what better way to celebrate the general's accomplishment (and satisfy your rumbling stomach) than with some authentic Mexican quesadillas? So grab a tortilla, cheese, salsa and vegetables and hit the stovetop to create a dish filled with the sweet taste of victory!

Prep time is about 3 minutes. Cook time is about 5 minutes. Makes 1 serving.

Kitchenware:
- nonstick pan
- spatula

Ingredients:
- 2 corn tortillas
- 4 slices of cheddar cheese
- chopped bell pepper, onions or any other vegetable
- salsa
- sour cream and guacamole (optional)

Preparation:

1. Place one tortilla on the nonstick pan over medium-high heat.
2. Spread a thin layer of salsa on top.
3. Layer on the cheese and vegetables.
4. Place the second tortilla on top.
5. Flip the quesadilla when the bottom side is golden brown.
6. When the second side is golden brown, remove from heat.
7. Cut up and serve with sour cream, guacamole and more salsa.
8. Enjoy!
