Healthy baked spring rolls

Asian sensation springs feelings of warmer days

Although fall brings in beautiful foliage and the excitement of upcoming holidays, the days are starting to become cooler and the winds more brisk. So it's hard not to fantasize about the end of winter and the start of spring when the weather will be warmer and the sun will shine brightly. What better way is there to feel the nice weather than through spring rolls, a traditional snack from the eastern hemisphere? These warm spring rolls will make any heart melt and yearn for the beautiful spring season. Plus, unlike deep-fried spring rolls, these little numbers are baked and healthy!

Spring rolls

Prep time is about 60 minutes. Makes about 4-6 servings.


Kitchenware:

- large bowl
- chopping board
- measuring cups
- knife
- baking container


Ingredients:

- 1 package of spring roll wraps (25 sheets/package)
- 1-1/2 lb. Napa cabbage
- 1 lb. ground pork
- 1 tsp. salt
- 1 tsp. soy sauce
- cooking oil


Preparation:

1. Peel leaves off of one pound of the Napa cabbage, and chop leaves with knife into one-inch slices on chopping board.
2. Preheat oven to 325 degrees.
2. Add soy sauce and salt to ground pork. Let the pork marinate for 10 -15 minutes.
3. Heat pan with vegetable or cooking oil. When the oil is ready, pour ground pork into pan. Cook the pork until it is well done. Add cabbage to the pan, and stir-fry for five minutes.
4. Pour cabbage and pork mixture into a large bowl. Allow ingredients to cool before wrapping spring rolls.
5. To wrap a spring roll, lay the spring roll sheet, which is in the shape of a square, with one point directly in front of you.
6. Place one teaspoon of pork-cabbage filling near the point in front of you, spreading it out but not getting the mixture too close to the edges. Roll the sheet twice away from you with the filling included. Fold the two side points of the sheet into the middle. Continue rolling the sheet to the point directly across, which should result in a cylindrical shaped spring roll.
7. Repeat steps five through six for desired number of spring rolls.
8. Place spring rolls in a baking container. Brush both sides of each spring roll with vegetable oil.
9. Bake spring rolls on one side for 15 minutes. Turn spring rolls over and bake for another 15 minutes.
