Easy to make traditional eggs and tomatoes dish


For closet food lovers who are scared of heat and anything that conducts it, never fear! This traditional Chinese dish is easy to make and satisfying to even the pickiest palate. With ingredients you can count on your fingers, this dish is versatile and suitable for any meal or any appetite.

Eggs and tomatoes

Prep time is about 5 minutes. Makes about 4-6 servings.

Kitchenware:

- 1 frying pan
- 1 standard kitchen knife
- 1 cutting board
- 1 spatula

Ingredients:

- 4 eggs
- 2 tomatoes
- 1 stick of scallions
- 2 pinches of salt
- 2 pinches of sugar
- 3 tablespoons of oil

Preparation:


Note: each step will use highest heat setting.

1. Scramble the eggs in the pan until they are just done. Remove eggs from the pan.

2. Slice the tomatoes into chunks. Add the oil to the pan, and immediately add in the tomatoes until they are well done; stir regularly. This step should take no longer than five minutes under an open flame. Add in the pinches of salt and sugar.

3. Add the scrambled eggs to the cooked tomatoes and stir briefly before turning off heat.

4. Cut the scallions into large chunks and add to the pan. You can turn on the heat briefly to soak the scallions in the tomatoes and eggs.

5. Remove pan from heat and pour into a large dish.

6. Enjoy!
