Recipes for beating the cold


Many feel the depressing crunch of winter blues when cold weather doesn't give way to snow. But the icy conditions and chill can be subdued with the right food. Eggnog, spiced cider and peppermint hot chocolate are all simple drinks that will warm taste buds and send a hopeful message to the rest of the body that winter break will eventually arrive.

Egg Nog

Prep time is about 5 minutes. Makes about 2 servings.

Kitchenware:
- 1 bowl
- mixer
- measuring cups
- 2 cups

Ingredients:
- 2 eggs
- 1 teaspoon vanilla
- 2 1/3 cups milk
- 3 tablespoons sugar
- 1/8 teaspoon nutmeg

Preparation:
1.Beat the eggs.
2.Blend all ingredients together in the bowl.
3.Chill and enjoy!

Spiced Apple Cider

Prep time is about 5 minutes. Cook time is about 1 hour. Makes about 8 servings.


Kitchenware:
- 1 pot
- strainer
- measuring cups
- cheesecloth
- mugs

Ingredients:
- 1 bottle of apple cider (64 ozs.)
- 1 teaspoon whole allspice
- 1 teaspoon whole cloves
- 3 cinnamon sticks
- 1/3 cup brown sugar

Preparation:
1. Beat the eggs.
2.Combine the apple cider and cinnamon sticks in the pot over low heat.
3.Wrap the allspice and cloves in the cheesecloth and add to the pot.
4.Stir in the brown sugar.
5.Bring the mixture to a boil. When spiced to the desired taste reduce heat to keep warm.
6.Serve and enjoy!

Peppermint Hot Chocolate

Prep time is about 3 minutes. Cook time is about 10 minutes. Makes about 3 servings.


Kitchenware:
- microwave
- whisk
- measuring cups
- 3 mugs

Ingredients:
- 1 egg
- 1 teaspoon vanilla
- 3 cups milk
- 1/3 cup semisweet grated chocolate
- 1 tablespoon sugar
- 3 candy canes

Preparation:
1.Microwave milk on high for 2 minutes.
2.Add the chocolate and sugar to the milk.
3.Whisk the egg until smooth in a separate bowl.
4.Combine the milk and egg.
5.Microwave on high for 3 to 4 minutes or until foamy.
6.Pour into mugs and stir with candy canes.
7.Enjoy!
