Mango madness
Readers have seen mango recipes from smoothies to salads, but Silver Chips is throwing another curveball of fruit-tacular eats: mango bread! This warm-weather treat is perfect for a picnic or at the pool to re-energize you for that day in the sun. Not only is this bread quick to whip up for guests, but the combination of mango, raisins and a hint of lemon leave eaters in a tropical bliss crazy for more! Prep time is about 10 minutes. Cooking time is 60 minutes. Makes about 10 servings.
Preparation:
1. Preheat oven to 350 degrees. Grease pans.
2. Combine sifted flour, cinnamon, baking soda, salt and sugar in a small bowl.
3. Beat eggs with oil into the flour mixture.
4. Stir in mangos, lemon juice and raisins.
5. Pour mixture into 2 greased loaf pans.
6. Bake for one hour or until a wooden pick in the center comes out clean.
7. Let it stand for five minutes before serving.
8. Enjoy!
